🍎✨ Light & Silky Apple Yogurt Flan

A gently sweet, melt-in-your-mouth flan filled with apple flavor and a silky yogurt custard.


🥣 Ingredients

For the Caramel

  • 1/2 cup sugar
  • 2 tbsp water
  • 1 tbsp lemon juice (prevents crystallizing)

For the Apple Layer

  • 2 medium apples, peeled and diced
  • 1 tbsp butter
  • 1–2 tbsp sugar
  • 1/2 tsp cinnamon (optional)
  • Squeeze of lemon juice

For the Yogurt Flan Custard

  • 1 cup plain yogurt (Greek or regular)
  • 1 cup milk (or evaporated milk for creamier texture)
  • 3 large eggs
  • 1/2 cup sugar (or less, to taste)
  • 1 tsp vanilla extract
  • Pinch of salt

👩‍🍳 Full Recipe Instructions

1. Make the caramel

  1. Add sugar + water + lemon juice to a small saucepan.
  2. Heat on medium without stirring.
  3. Cook until the mixture turns amber-gold.
  4. Immediately pour the caramel into the bottom of a flan mold or baking dish.
  5. Swirl to coat the bottom evenly.
    Let it cool and harden.

2. Cook the apples

  1. In a skillet, melt butter.
  2. Add diced apples, sugar, cinnamon (optional), and a splash of lemon.
  3. Cook 5–7 minutes until softened but not mushy.
  4. Spread the apples evenly on top of the cooled caramel layer.

3. Prepare the yogurt flan mixture

In a bowl, whisk together:

  • yogurt
  • milk
  • eggs
  • sugar
  • vanilla
  • pinch of salt

Mix until smooth (don’t overbeat—prevents bubbles).


4. Pour and bake

  1. Pour the flan mixture over the apple layer.
  2. Place the baking dish into a larger pan and fill the outer pan halfway with hot water (water bath).
  3. Bake at 325°F (160°C) for 45–60 minutes, or until the center is set but slightly jiggly.

5. Cool & chill

  1. Remove from water bath.
  2. Let it cool to room temperature.
  3. Cover and refrigerate at least 4 hours or overnight for best texture.

6. Unmold

  1. Run a knife around the edges.
  2. Place a plate on top and flip quickly.
  3. The caramel will cascade over the flan and apples—beautiful!
